Keto Breakfast Parfaits Recipe
• 3 cups plain Greek yogurt
• 3 cups heavy whipping cream
• 8 drops stevia extract
• 1 tsp vanilla extract
• 1 cup chopped walnuts
• 1 tsp ground cinnamon
• 4 tbsp unsweetened cocoa nibs
• 4 large strawberries, sliced
Keto Breakfast Parfaits Process
1-In a medium bowl, combine the Greek yogurt, heavy cream, stevia extract, and vanilla extract. Mix until well combined.
2-In a separate medium bowl, combine the chopped walnuts, cinnamon, and cocoa nibs. Mix until well combined.
3-Place 1⁄2 cup of the yogurt mixture and equal amounts of the nut mixture side by side into each of 6 meal prep containers. Top each serving with equal amounts of the sliced strawberries.
4-When ready to serve, stir to combine the ingredients.
Storage: Store in the fridge for up to 4 days or freeze for up to 1 week.
TIP
If you dislike the taste of stevia, you can use a monk fruit sweetener blend instead, which is slightly less sweet than stevia extract. To achieve an equivalent level of sweetness, refer to the product packaging to find the amount that is equal to 1⁄4 cup sugar.
