Keto Breakfast Blueberry Chia Seed Pudding • This is one of my favorite overnight breakfast recipes. It’s quick and portable, and the combination of chia seeds, vanilla, coconut, and blueberries is delicious.

Keto Breakfast Blueberry Chia Seed Recipe
• 13.5oz (400ml) can unsweetened coconut cream
• 1⁄2 cup water
• 12 drops stevia extract
• 2 tsp vanilla extract
• 6 tbsp chia seeds
• 1⁄2 cup fresh blueberries
• 1 tbsp shredded coconut
Keto Breakfast Blueberry Chia Seed Process
1-Add the entire contents of the coconut cream to a medium bowl. Whisk until combined, then add the water and continue whisking until the ingredients are well combined.
2-Add the stevia extract, vanilla extract, and chia seeds to the bowl. Mix well, then add the blueberries and stir. Transfer the pudding to 6 meal prep containers and top each serving with a pinch of the shredded coconut. Transfer to the fridge to chill for a minimum of 8 hours.
Storage: Store in the fridge for up to 6 days or freeze for up to 1 month.
TIP
If you don’t have blueberries, you can substitute an equal amount of raspberries, blackberries, or sliced strawberries.
