Keto Baked Lemon Salmon Recipe
• This super simple recipe is perfect for meal prep or a quick weeknight dinner. Simply place the ingredients in the foil packets, and in 25 minutes you’ve got a delicious lunch or dinner!

Keto Baked Lemon Salmon Recipe
• 1lb (450g) skin-on salmon filet, cut into 4 pieces
• 5 tbsp butter
• 2 bunches asparagus, woody ends trimmed and cut into 16 spears
• 4 lemon slices (about 1⁄4 medium lemon)
• 2 tsp salt
• 2 tsp black pepper
Keto Baked Lemon Salmon Process
1-Preheat the oven to 350°F (180°C) and cut four 10-inch (25cm) squares of aluminum foil.

2-Place the foil squares shiny sides up on a flat surface. Place 4 trimmed asparagus spears into the middle of each square, then place a piece of the salmon on top. Top the salmon with 1 1⁄4 tablespoon of the butter, then season with 1⁄2 teaspoon of the salt and 1⁄2 teaspoon of the pepper. Top with a lemon slice, crimp the edges together, and twist the ends closed. Repeat with the remaining filets.

3-Place the foil packets on a large baking sheet and transfer them to the oven to bake for 25 minutes or until the internal temperature of the salmon reaches 145°F (63°C). Remove the packets from the oven and set aside to cool for 5 minutes.

4-Unwrap the cooled packets and divide the contents into 4 meal prep containers.
Storage: Store in the fridge for up to 4 days or freeze for up to 2 weeks.
TIP
For different flavor combinations, try replacing the asparagus with broccoli, or replacing the lemon slices with lime slices.
